It seems like it's been extra hot everywhere this year and here in the mountains was no exception. All I want to eat are salads the size of my head filled with farmers' market bounty. Having a variety of easy dressing recipes on hand helps make a salad come together quickly. This Sweet Miso Tahini Dressing is a take on the tahini sauce you might get with falafel. The sweetness from the maple syrup balances the tahini beautifully. And the addition of miso is a simple way to get in probiotics (if you use a living miso.)

Sweet Miso Tahini Dressing
A creamy, rich tahini based sauce perfect as a dressing or sauce for salads, falafel, sandwiches, and more!
Ingredients
- 1 clove garlic minced
- 1⁄3 cup tahini
- 1-2 tablespoons maple syrup or agave
- 1 tablespoon miso
- 3 tablespoons lemon juice
- 1 teaspoon apple cider vinegar
- 1 pinch sea salt
- 1 pinch Ground black pepper
- 3 tablespoons Water to thin
Instructions
- Mince the garlic and set it aside.
- Add tahini, maple syrup, miso, lemon juice, apple cider vinegar, salt, and pepper to a small bowl. Whisk until smooth.
- Add 3 tablespoons of water and stir to incorporate. If you like a thinner dressing, add more water until you get the consistency you want.
- Stir in the garlic. Taste and add salt or pepper if necessary. The garlic flavor will become more pronounced as it sits.
- Refrigerate until needed, for up to 5 days. You may need to thin with more water after refrigeration.
Notes
You can also just add all ingredients to a small blender jar and blend until smooth.
You can use any miso in this but I usually use a light variety like our chickpea, yellow split pea, or mortgage lifter bean miso.
