If you like big flavor, this Tempeh Shawarma Pita recipe is for you!
The mycelium in tempeh does a wonderful job soaking up all the shawarma spices. We used our Sun Rise tempeh in this recipe but any of our chickpea tempeh varieties would be great.

If you'd rather, serve up everything on top of your favorite grain. It would be easy to meal prep in containers this way.
Tempeh Shawarma Pita

Tempeh takes on shawarma spices beautifully! Enjoy as a wrap or make it a bowl by serving on a grain.
Ingredients
- 16 ounces Luv Tempeh, (chickpea varieties work best) cut into bite-sized pieces
- 2 medium Red bell pepper, cut into thin strips
- 1 medium Red onion, cut into thin strips
- 3 tbsp Olive oil
- 2 tbsp Lemon juice
- 4 tsp shawarma seasoning (recipe below so you can make your own)
- salt, to taste
Yogurt Dressing
- 6 tbsp Vegan yogurt
- 3 tbsp Lemon juice
- 1/2 tsp salt
- 1/2 tsp Garlic powder
To Serve
- 6 pita bread
- 1 cup diced tomato
- 6 lettuce leaves
Shawarma Spice Mix
- 2 tsp Sweet paprika
- 1 tsp Cayenne, omit if you don't want it hot
- 2 tsp Ground cumin
- 1/2 tsp Ground turmeric
- 2 tsp Garlic powder
- 1 tsp Ginger powder
- 1 tsp Cardamon powder
- 2 tsp Cinnamon powder
- 1 tsp Nutmeg powder
- 1/2 tsp Ground cloves
- 1 tsp Allspice powder
- 2 tsp Ground Black Pepper
Instructions
- Add tempeh, 2 tablespoons of olive oil, and one tablespoon of lemon juice, and 3 teaspoons of shawarma seasoning to a bowl and toss.
- Heat a frying pan over medium high heat. Add tempeh mixture.
- Now add the bell peppers and onions, final tablespoon of olive oil, tablespoon of lemon juice, and 1 teaspoon of shawarma seasoning to the same bowl and toss.
- When the tempeh starts to brown, add the bowl of veggies. Turn the temperature down to medium and keep frying until the onion has softened, stirring frequently. Salt to taste while cooking.
- Make the yogurt dressing by whisking all the ingredients together.
- To serve, add a lettuce leaf to the top of a pita, spoon on tempeh/veggie mixture. Sprinkle on tomato. Drizzle with yogurt dressing.
- To make the shawarma spice mix: whisk all spices together in a small bowl. Store extra in a cabinet. Makes about 1/3 cup.
Notes
Try this as a bowl by serving on rice and shredding the lettuce.
